Construction: Built from durable 600D fabric, the unit’s four sides and top use Single layer 7mm thick acupuncture and an aluminum foil film; the top section can reach temperatures of 158-194℉(70-90 ℃). The base is 600D cloth with a double-layer 7mm thick acupuncture pad, heating wire (with overheating ), plus aluminum foil film for even heat distribution. Temperature & Timer: The digital controller lets you set temperatures between 50° to 113° (10°-45°) to match the needs of virtually any dough. A programmable timer ranges from 0-12H (0H is continuous) to simplify long or short fermentation cycles. NTC Temperature Sensor: The proofer includes an NTC Temperature Sensor that can be placed inside the proofing or fermentation container so the controller monitors the actual temperature of the proofing mass and maintains the preset value. (NOTE: When the NTC sensor is positioned correctly, the display will show the temperature close to the NTC temperature sensor (the proofing mass temperature). If the NTC sensor is not secured correctly, the display will show the ambient air temperature, not the proofing temperature.) Design & Portability: A foldable, zippered construction allows quick setup and compact storage — convenient for home kitchens or taking on trips. Multifunctional Use: While ideal for proofing dough, this box can also be used to ferment tea, yogurt, water kefir, milk kefir, sauerkraut, vegetables, and other fermented foods, or to assist with some beers and wines that require controlled fermentation, as well as keeping various foods and items warm.
