It provides a warm surface to speed and stabilize fermentation for all types of dough. Multifunctional food warmer: Beyond proofing, this heating mat can defrost meat, ferment yogurt and certain fruit preparations, and keep prepared foods warm — items such as cookies, fried chicken, and similar dishes. Note: the unit defaults to 89 degrees; when using the preservation function you should adjust the temperature to obtain the desired preservation effect. Precise temperature control: The proofer lets you set temperatures from 59° to 140° to meet the needs of different recipes. Regular bread dough typically ferments best around 95° to 100°, and this mat is suitable for maintaining those conditions as well as keeping most foods warm. Handling tip: If you set the mat to 83 degrees, it will be warm but may feel cool to the touch compared with normal body temperature (98.6F (37C)) — this sensation results from heat transfer between your hand and the mat. Simple operation: Lay the mat lengthwise, turn on the thermostat to preheat for 15 minutes, place your dough bowl on the warmed surface, and cover the dough with a lid.
